That about says it. E-mail has been down since Thursday, along with the order and main site server. The later (obviously) are back up, but e-mail is being difficult. So, if you have written, I am not ignoring you and your e-mail is not lost. I will respond to everyone when it is functioning again.

I have been looking for cocoa bean mulch for my garden to use as a weed deterent. Do you know of a place I could purchase this?
We are currently out of stock of the Santha Wet Grinder. Even though it is marked "out of stock", if you want one when they come in, you are welcome to place the order (and please tell me if you want to pay now or later) and you will get it fresh off the boat.
Also, there are a couple of nice things with the next batch. Rumor has it that Santha will now be calling these Alchemist Stone Chocolate Melangers. I feel honored. Mostly it will be the same unit, except for two changes for the better. There will be a integrated 99 hour timer available and due to a little prompting from yours truly, they have improved their wiring. If you ever saw inside some of the originally, they were a little less than professional. Frankly, I was just glad to have a machine that would let us make chocolate, but I am very happy they are taking constructive suggestions and implementing them.

How do i ferment the beans? I am currently a Peace Corps Volunteer in Vanuatu, have no utilities, but have plenty of access to the dried or fresh beans. Chocolate would be nice, and i have access sugar and ill make a mortar and pestile. I'll have access to the internet in three weeks and will check back to this website posting then. FYI: The beans are an export product here to France from what i have figured out so far, they dry them then sell them. The locals eat the sweet/tart flesh surrounding the seed but dont know how to make chocolate. Thank You

Katie, there is really no ONE method, but follow the links in the Alchemist's notebook and that should give you what you need.
