I won't be answering emails November 6-12. Why?
I will be teaching my Roasting Seminar in Seattle WA before the NW Chocolate Festival at Indi Chocolate, on Nov 7th . Sorry but all the spaces are full. The next Seminar will probably be in February or March next year.
If you want to meet up at the Festival, I'll be around on the floor Saturday. Feel free to reach out beforehand. Most likely I will not be at the non-Unconference (or whatever it is now called) before the Festival.
Finally, the new crop of 2019 Belize Org is in. There is sweet dried fig note that moves to dried cherry and raisin the farther you take the degree of roast. There is gentle tobacco and full grain leather and a solid chocolate laced all throughout with an utterly lovely dense creamy mouth feel.
